Cooking Sustainability

Sustainable cooking: Cooking sustainability means cooking with the ingredients that are in season and gown locally. This means you can't make tomato soup in the winter when tomatoes are no longer available. Having to get them from a store, where they come from far away is not, and I repeat is not sustainable cooking! Making something with a potato which IS grown locally and in season is cooking sustainability.

Here are some examples of recipes that are sustainable:
Caramelized Cauliflower by Eric Garske and Jake Montgomery
Ingredients:
  • 1 head of Cauliflower 
  • 1/2 teaspoon of salt
  • 2 tablespoons of pepper
  • Half a pepper
  • Pinch of garlic
  • 1 zip lock bag
  • Cooking tray 
Directions: 
  1. Pre-heat oven to 400
  2. Pull all ingredients together in zip lock bag and shake until cauliflower is evenly coated
  3. Arrange on tray in single layered rows
  4. Put in oven for 20-30 minutes, checking and stirring every ten minutes, until cauliflower is golden brown.
  5. Serve hot

Weekly Progress at Terra Nova

 Testing the irrigation, it needs a little more work, but it is very close to being done! Hooray! Good job everyone!

Digging up blackberries. Fun fact: Blackberries that turn orange have a serious fungal disease that can not be cured, you should destroy them asap. 

Students harvested peppers in the green house and plants from the outside were moved to the green house so that they wouldn't freeze in the colder weather.

To keep garlic warm during winter and keep weeds out of the beds straw was put over the beds.

Students are now learning about different aspects of climate change in groups of two or three.

Weekly Progress at Terra Nova

Students tested samples of soil in their rows last week to determine what cover crop is needed to enrich the soil. Rows are now for a cover crop.

Irrigation is being set up in the raised beds. New beds were also added. 

Learning about what cover crop to use is something that the students learned about this week too. Along with learning how to discuss in a socratic seminar, they practiced with articles about being vegetation.

Week Overview

Students have been working on aquaponic projects all of last week and are finishing their projects this week. 
Here plants are being fertilized by nutrient filled water. The water is nutrient because of the fish waste and the plants helps purify the water the fish live in, not a bad system at the plants or the fish!

Students were also given a presentation.
